Ingredients

Servings
  • 215 g firmly packed brown sugar
  • 170 g unsalted butter, softened
  • 1 large egg
  • 1½ teaspoons vanilla extract
  • 250 g all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon table salt
  • 227 g soft caramels (unwrapped)
  • 2 tablespoons heavy cream
  • Flaky sea salt, for topping

Instructions

  1. Gather the ingredients. Line 2 baking sheets with parchment paper and set aside.

  2. In a large bowl, cream together the brown sugar and butter until light and fluffy.

  3. Add the egg and vanilla extract and mix well to combine.

  4. In another bowl, stir together the flour, baking soda, and table salt.

  5. Mix the dry ingredients into the butter mixture.

  6. Cover and refrigerate the dough for at least 1 hour. When ready to bake, preheat the oven to 190 °C. Roll the dough into 1-inch balls and place on the prepared baking sheets about 2½ cm apart. Bake for about 10 minutes or until golden brown.

  7. Cool completely on a wire rack.

  8. Meanwhile, place the unwrapped caramels and heavy cream in a microwave-safe bowl. Microwave for 30 seconds, then stir and continue to microwave in 15-second intervals until melted and smooth.

  9. Drizzle the melted caramel over each cookie. If the caramel begins to thicken as you work, microwave again in 15-second increments.

  10. Sprinkle with flaky sea salt. Cool at room temperature until the caramel sets. Enjoy.
