London Fog
Earl Grey steeped strong, sweetened with vanilla and topped with hot frothed milk: a tea latte born in Vancouver and named for the weather.
Ingredients
- 2 teaspoons loose Earl Grey (or 2 teabags)
- 150 ml water, just off the boil
- 150 ml whole milk (or oat milk)
- 2 teaspoons vanilla syrup, or 1 teaspoon honey and a drop of vanilla extract
- A pinch of dried lavender (optional)
Instructions
-
Steep the Earl Grey, with the lavender if using, in the water for 4 minutes, then strain into a large cup and stir in the syrup.
-
Heat the milk until steaming but not boiling, then froth it with a whisk, a frother or by shaking it in a jar.
-
Pour the milk over the tea, holding back the foam with a spoon, then spoon the foam on top.
