Ingredients
- 1 ripe tomato, chopped
- 1 green pepper, sliced
- 1 red pepper, sliced
- 1 hot pepper, sliced
- 113 g (120 g) feta cheese
- 99 g (100 g) kasseri or gouda, cut into small pieces
- Extra virgin olive oil, as your heart desires
- 1 tsp dried oregano
- Paprika, to taste
- Salt and freshly ground black pepper, to taste
Instructions
-
Preheat the oven to 200 °C (200 °C).
-
In a small ovenproof dish, layer half of the chopped tomato and sliced peppers. Place the feta cheese in the centre and cover with the remaining vegetables.
-
Drizzle generously with extra virgin olive oil and season with oregano, salt, and freshly ground black pepper.
-
Scatter the kasseri (or gouda) over the top and finish with a sprinkle of paprika.
-
Cover the dish with a lid or aluminium foil and bake for approximately 30 minutes, until the vegetables are tender and the cheeses are beautifully melted and bubbling.
-
Remove from the oven, gently mix everything together with a fork, and serve immediately while hot, with plenty of fresh, crusty bread for dipping!
