Horchata Casera de Chufa Valenciana (Homemade Valencia Tiger Nut Horchata)

Ingredients

Servings
  • 500 grams of tiger nuts
  • 2 litres of water
  • 150 grams of icing sugar

Instructions

  1. The day before, soak the tiger nuts in water for 24 hours. In this case, they are soaked because the recipe I was given used dried tiger nuts, but I am not certain whether fresh tiger nuts would need soaking.

  2. The following day, begin blending the tiger nuts with the water and icing sugar in a food processor. You can also use a hand blender, but it will take longer, so I recommend a powerful blender as tiger nuts are hard. The food processor I have is very powerful and crushes them very well.

  3. Now it is time to strain them through a sieve. Press firmly to extract all the juice from the tiger nuts and remove any possible impurities, as the drink should be very liquid. As we will see at first, it will be quite thick.
