Jock Madame Brekkie Toastie

Make the thick béchamel by melting the butter and stirring through the flour.

Stir over heat for a few minutes before adding the milk and stirring over heat till smooth.

Add a pinch of salt, the spices, and the Dijon. Combine and set aside.

Assemble the toastie by spreading each side with a bit of béchamel.

Top one side with haggis and cheese then sandwich together.

Butter one side and toast, weighted, in a hot pan. Spread butter on the top side then flip and toast again.

Spread the remaining béchamel on the top then cover with cheese. Grill till golden and bubbling.

When the toastie is ready, pop it on the top and tuck in!
